One of the perks of visiting Oahu’s North Shore — besides the chance to see surfers tackling giant waves — is the opportunity to enjoy some fresh shrimp from one of the many shrimp trucks parked along the highway. It’s not uncommon to have to wait in a long line before you get your chance to order a plate of shrimp, especially at lunch time.
Much of the coastal land in this area is fairly flat, and aquaculture has been going on for some time. Several decades ago, food trucks starting serving the harvested shrimp to customers.

Of all the trucks, Giovanni’s was the first on the scene and still seems to be the favorite. Giovanni’s is the white truck with all the graffiti on it. We stopped there and got a few plates of the garlic shrimp, which were buttery, garlicy, and delicious. Wish I’d taken the time for a photo of my plate, but I was too hungry to wait.
