At new restaurant, patrons eat with the fishes

Europe’s first underwater restaurant is open for business, with a dining room that features huge viewing windows into a forest of kelp and fish.

The restaurant, called simply ‘Under,’ is at Lindesnes on Norway’s southern tip, is entered from above, and can serve forty customers at its one daily sitting. 

Danish chef Nicolai Ellitsgaard and his staff cook imaginative seasonal menus based on local sea harvests, including a dessert composed of five different types of algae collected from a nearby shore. Ellitsgaard says “We have this small window next to the kitchen and every time some special kind of fish comes by, I always start thinking about how it would taste.”

If you’re wondering how a restaurant like that can survive on 40 diners a day, wonder no more. Dinner is priced at €230, and double that for wine.
