It was early morning in the Marrakech Medina. We were marching through the Souk when we passed some olive vendors.
One of them especially caught my eye, so I stopped to take a few photos. He was a bearded man wearing a baseball cap to shield his eyes from the rising sun, and he was carefully piling olives into a pyramid.
Olives are a staple in the Moroccan diet. A small dish of them usually appears on the table at every meal. And they are delicious.
Did you know that the different colors of olives are a reflection of how ripe they are when they are picked, and not due to different varieties? Early = green; Mid = red; Ripe = black. You can buy them in bulk or if you prefer in jars.
What you are saying about the colours of olives is perfectly true. Unfortunately, however, there is a simple way of turning (cheaper) green olives into (more expensive) black ones. See below:

I would assume that the black ones in the photos are genuine ripe ones, though.
