France has many wonderful cheeses and Paris has many wonderful cheese shops, but now something new is on the horizon: in September, a new cheese-maker will begin selling its produce, made in Paris.
While New York, London and other urban centers have artisanal cheese-makers inside the city, Paris has not, at least not for a century or so. Pierre Coulon, a former goat breeder from France's Atlantic coast, intends to change that when he opens Laiterie de Paris in the 18e. No livestock in the city, but the cheese will be made on premises.
Coulon has indicated in his crowdfunding ads that he will, at least at first, stick to classic cheeses such as brie, camembert, tomme. He will also sell yogurt, butter and fresh cream.
