It would be a moving memorial, and you've share it very nicely, here, thanks. The last time I was in New York the Memorial was almost (but not completely) finished, so we couldn't see it. Guess I have (yet another) excuse to return to the Big Apple.

Nice to see real transplanted cheesemakers, as opposed to some of the awful factory stuff that's out there... (Kraft, etc.) Aged Gouda (two years is about right) is one of my favorites...
